Ginger & Scallion (Khao Soi Na Chiang Rai)
One of Seattle’s most beloved spots, Ginger & Scallion, is back with a new menu concept that is an absolute must-try! The new menu focuses on Khao Soi, a Northern Thai curry noodle soup that is full of rich flavor. This new concept comes from the same talented team of brothers JP and Boss, who also own Secret Congee and have run several successful pop-ups around the city.

Khao Soi is made with coconut milk and is most commonly served with slow-cooked meat and egg noodles. On top of every bowl comes crispy noodles, pickled mustard greens, and a wedge of lime. Na Chiang Rai means “At Chiang Rai,” which is a city-province in northern Thailand known for its natural and beautiful hillside landscapes, and of course, Khao Soi. Din Tai Fung also has standout vegan and vegetarian dishes that are perfect for dietary restrictions, like the cucumber salad, vegetable and mushroom fried rice, spicy vegan noodles, and sweet taro buns. These dishes deliver bold flavors while supporting guests’ plant-based, health-conscious preferences.
