Springtime Sips: Everything We’re Drinking This Season

Spring has officially sprung, bringing with it a refreshing wave of vibrant drinks that perfectly complement the longer days and sunnier skies. Whether you’re sipping on a floral cocktail at brunch, cracking open a crisp canned spritz in the park, or exploring bright, zesty wines that pair perfectly with seasonal fare, this is the time to shake off the winter blues and raise a glass to new beginnings. Here’s what we’re loving in our glasses this spring.

Highland Park Scotch Whisky

Highland Park is a renowned single malt distillery located in Orkney, Scotland, with a history dating back to 1798. Founded by Magnus Eunson, a butcher and church officer by day and an illicit distiller by night, Highland Park is one of the oldest legally operating distilleries in Scotland. Its remote location on the windswept Orkney Islands lends a distinct character to its whiskies, shaped by the harsh climate and unique terroir.

What sets Highland Park apart is its commitment to traditional methods, such as floor malting a portion of its barley and using local peat cut from Hobbister Moor, which imparts a lightly smoky, aromatic character. The distillery also emphasizes long maturation in sherry-seasoned oak casks, which contributes to its signature balance of sweet, smoky, and complex flavors. Their core range includes expressions like the 12-Year-Old Viking Honour, 18-Year-Old Viking Pride, and more limited, higher-aged bottlings, each reflecting the brand’s deep roots in Norse heritage and craftsmanship.
