Must-Visit Restaurant This Summer: Water’s Table

Located inside the Hyatt Regency Lake Washington at Seattle’s Southport, Water’s Table is a prime destination for al fresco summer dining, with its stunning lakefront location and delicious Pacific Northwest cuisine. Water’s Table embraces PNW culinary traditions by sourcing local produce, seafood, and meats from nearby farms, ranches, and fisheries. 

Stepping into Water’s Table, you’re welcomed by a laid‑back and upscale coastal atmosphere. You can choose from indoor seating or their heated, covered patio offering beautiful views of Lake Washington. Whether you’re dining lakeside or unwinding by the bar, the ambiance feels like an escape from the city’s hustle and is ideal for those warm summer evenings.

The menu at Water’s Table is vibrant and seasonally driven, with a focus on fresh, locally sourced seafood. Brunch highlights include the Dungeness crab scramble, the salmon Eggs Benedict, and the buttermilk brined fried chicken with French toast. Across all mealtimes, signature dishes include the spicy prawns over polenta, the clam chowder with bacon, the wild Dungeness crab cakes, and the Manila clams with shallots and white wine. 

Newest additions to the menu include the king salmon with creamy polenta, a locally foraged mushroom risotto, and a Salmon Creek pork chop with a citrus pea potato puree and black truffle gravy. Water’s Table also debuted an assortment of house-made butters to complement its Prime Grade steak selections (the chimichurri butter is our favorite!). 

Pastry Chef Amy Tung has introduced a globally inspired dessert menu which includes delicious options like the Paris Brulee, a mango crème brulee with mango compote and raspberry whip; the Dubai Chocolate, a pistachio cremeux paired with a fudgy brownie and tahini kataifi tuile; the Aussie Pavlova, a traditional pavlova topped with passion fruit cream and seasonal fruit; and the Kyoto Matcha Mille Crepe, layered with matcha cream, raspberry gel, and raspberry rice paper puffs.

The beverage program at Water’s Table is thoughtfully designed to pair with the restaurant’s Pacific Northwest cuisine and stunning lakeside atmosphere. With seasonal cocktails, regional wines on tap, a rotating craft beer selection, and alcohol-free options, there is something for everyone. 

The refreshed summer cocktail menu features elevated takes on warm-weather favorites created in the hotel’s “Bev Lab” utilizing house-made syrups and juices. Highlights include the Cantaloupe, crafted with Knob Creek bourbon and cantaloupe juice; the Sweet Pea, made with Suspect PJ Whiskey and house made sweet pea syrup; Jay’s Rye Smash, featuring High West Rye and fresh blackberries; and the Margarita Amara blended with Patron Silver and cream of coconut.

At Water’s Table, every visit feels like a celebration of summer in the Northwest.
