I used to be gluten-free due to nebulous IBS symptoms—until pregnancy somehow cured me (amazing, right?!). And even now that I can eat all the fried chicken, The Chicken Supply still makes one of my favourites in Seattle. It also happens to be gluten-free, which is just a bonus at this point.
Owner and head chef, Paolo Campbell, opened this Phinney Ridge staple in 2021. In addition to the brick-and-mortar, they launched a food trailer, Biig Biird Trailer, last year and it’s available for weddings, parties, corporate events, festivals, and more.
What sets it apart? The breading and flavor profile are nostalgic, reminding me of Taiwanese night market fried chicken—so crispy, savory, and juicy.
My only complaint is the inconsistency in the spice level. When I order it “spicy,” sometimes it’s perfectly flavorful with just the right kick, and other times it’s so hot it’s hard to enjoy. Because of that, I usually get both spicy and regular. Honestly, the regular version is packed with flavor on its own.
Our go-to order is two thighs and two wings—plenty for two people. We always get the coconut collard greens too. They’re creamy, lightly spiced, and topped with crunchy peanuts. The potatoes and Monggo (a comforting rice and beans dish) are also solid sides, but really, it’s all about the chicken.

You can pre-order for same-day or next-day pickup. I highly recommend pre-ordering, because they often sell out for walk ups. That said, I’ve never had trouble getting what I want even when ordering just a few hours ahead.
