For an exceptional and unique chef-driven steakhouse experience, look no further than The Butcher’s Table. Considered one of the nation’s top steakhouses, The Butcher’s Table features Mishima Reserve American Wagyu and offers an unparalleled culinary experience, complemented by a lively bar. The restaurant is just one pillar of the Sugar Mountain family, which also includes Mishima Reserve, Pasta & Co., and Beecher’s Handmade Cheese.

Chef Morgan Mueller’s menu includes various cuts and weights of American Wagyu, including a filet mignon tasting flight (a must-try!) and Bone Marrow Crusted Classic Ribeye. Beyond the exquisite steak program, The Butcher’s Table offers some of the best seafood in Seattle and are known for their smoked king salmon, sea scallops, Bigeye tuna tostada, and carefully curated raw bar. The menu rotates seasonally, highlighting local, fresh, and the highest quality ingredients. Don’t forget to try their famous beef fat fries, and their steak tartare that’s made table-side.

A lesser known fact about The Butcher’s Table is that in addition to the restaurant, they have their own in-house butcher shop! Tucked into the south side of the main floor you’ll find cases stocked full of Mishima Reserve American Wagyu ready to take home and grill for a restaurant worthy dinner or casual bbq. There are several cuts and weights of steaks and roasts to choose from and 100% American Wagyu burger patties for just $5.

The wagyu beef has a distinctive look, one that’s immediately recognizable and easy to describe. You’ll notice its deep color, as well as the extensive and delicate marbling woven throughout. This intramuscular fat, which melts and permeates the meat during cooking, contributes to the “richness factor” of the beef – the more marbling, the richer the flavor. Traditional meat production in the United States is often optimized for volume and efficiency at the expense of health and flavor. In tasting Mishima Reserve beef for the first time, people have compared the experience to enjoying a carrot pulled fresh from the garden versus one from the grocery store.
