Fall Comforts: Altura’s Gorgonzola-Stuffed Figs With Pancetta

The Scoop: In the mood to dazzle your taste buds with something a little different? Altura is a seasonal Italian restaurant that opens this weekend on Capitol Hill, and will feature the culinary stylings of Chef Nathan Lockwood.

Prepared in the classic Italian way, fresh figs are stuffed with creamy Gorgonzola. Chef Lockwood adds a twist to this traditional dish by wrapping the figs with a sliver of smoky pancetta, an Italian bacon traditionally seasoned with nutmeg and fennel. The figs are then drizzled with honey and fried sage, evoking classic fall flavors.

Best of all, these savory comfort figs are complimentary. Altura serves them during fig season as an amuse-bouche (single, bite-sized hors d’oeuvres), so each patron receives one as a complimentary bite to start their meal. A rotating selection of amuse-bouche is based on seasonal availability — so hurry and get these figs while they last!

Fun Fact: The herbs used for this dish, as well as other dishes at Altura, come from a large garden in North Seattle that is tended by Chef Lockwood and his family. You can’t get any fresher than that.
