Paseo, the very popular and seriously delicious, nationally renowned Caribbean sandwich shop in Fremont, is expanding to SoDo with the grand opening of its 1760 1st Ave S, Seattle, WA location (on the corner of Holgate St & 1st Ave S) today from 5:00 to 9:00 pm. Located at the center of Seattle’s sports core by CenturyLink and Safeco Fields, the former diner space (Donna’s Diner & Mac’s Smokehouse…both listed on the current sign until Paseo’s new sign goes up), was leased from developer Chris Hansen.
The current signage is in-line with the original Paseo of not having a sign, so launching without a sign was a tribute to Fremont. Hansen, as many may know, is working to bring an NBA back to Seattle and his team was very happy to have Paseo’s brand take over and renovate this old diner. According to Paseo owner, Ryan Santwire, Paseo has used the existing infrastructure and character of this storied diner location and made it cool again, giving new life to a vital corner of the city.
The SoDo location features all the iconic sandwiches and favorite entrees from the original Paseo, plus new menu items and beer, wine and sangria (as well as the very special Roasted Corn that has been enhanced.) Please see more details about the new location below.
SoDo Menu Highlights (in addition to same great favorites from the original location.)
–Roasted Corn~ Paseo sells it individually or guests to the newest location can order buckets of corn. Santwire says this corn, ” is a must try”. Paseo recently won an award for Top 40 Famous State Fair Foods at American restaurants by USA Today (rumor has it Paseo’s corn was in the Top 10 by the judges)
–Caribbean Citrus Salad – Hearts of Romaine, seasonal fruit, candied walnuts and a special Caribbean citrus vinaigrette. You can add your choice of protein (chicken, pork, prawns or salmon).
Unlike Fremont, the SoDo Paseo will offer lots of selections of beer, cider, wine and sangria.
All beers and Sangria will be a $1 off for the Grand Opening that kicks off today.
