Food Porn: Von’s 1000Spirits

In this edition of Food Porn, we feature Von’s 1000Spirits. The original Von’s had been a Seattle institution open for 25 years on Pine in downtown, has moved to a new location near Harbor Steps on 1st Ave. Von’s is a family-run business with original owner Tim Firnstahl, his daughter Merrisa Firnstahl-Claridge and his son-in-law Jason Amador. A shrine to spirits and sourdough, Von’s new concept is sure to draw a sleek crowd.

Baking their own sourdough pizzas, pastas, and brioche in house sets Von’s apart. There is a bit more bit and chew in the pasta, extra ‘oomph’ in the pizza, and a butteryness to the brioche. On top of this, they have an impressive display of spirits, including Mayahuel Tequila, a house-aged in custom-made white oak barrels as well as Housemade Sanctified Vodka that is ultra-filtered in pure activated charcoal, removing the impurities for a smooth flavor.

Both the sweet and savory beignets are melt-in-your mouth good. Sweet Cream, Cinnamon & Sugar Beignets are incredibly fluffy and light. The Savory Asiago Beignets are wonderfully creamy and also very light. You’d think fried dough + cheese would be heavy, but it’s not. They are the perfectly poppable appetizer.

The Vietnamese Style Banh Mi is hoisin glazed with pickled carrot and cucumber relish, and finished with a sambal aioli. The flavors are bold and the patty is juicy and moist. Their “Prime Hamburgs” also include the Classic with cheddar cheese an candied bacon, the French Onion with sherry-caramelized onions and Dijon aioli, and the Monster, for $30, is a Classic doubled up. You join the Monster Hall of Fame if you finish it.

If you’re looked for a lighter burger, try the Chicken Adobo or the 21 Club Cod Cake. They also offer an array of Pike Place Market-sourced salads that are more than just a side. The Spiced Chicken Salad Entree or the Chopped Steak Salad are just two of the many lighter, but satisfying fresh choices.

Open Monday through Thursday 11:00 am to midnight. Friday from 11:00 am to 1:00 am, Saturday from 9:00 am to 1:00 am, and Sunday from 11:00 am to midnight.
