In this edition of Treat Yo Self, we feature afternoon tea at the Fairmont Olympic Hotel downtown. The Georgian restaurant, located within the Fairmont, offers a traditional afternoon tea service. The dining room is stunning. Decorated with spectacular chandeliers, high ceilings, and Palladian windows, the surroundings are classic and the service is impeccable. Whether you are celebrating a special occasion or catching up with friends, it’s quite a treat.
All of the teas are sustainably and ethically sourced and made exclusively for the Fairmont hotels. The honey used at The Georgian is sourced from the ten rooftop honeybee hives by Chef Gavin Stephenson. Read more about the Fairmont’s Bee Sustainable Program here.
Mini French macarons, tea sandwiches, and other sweet and savory bites are presented on a 3-tiered dessert stand. The menu varies seasonally. Everything is made from scratch, in house. From the bread and pastries to smoked and candied salmon, Chef Gavin takes pride in overseeing the whole process to maintain the integrity of the food his kitchen creates and serves. The smoked salmon on rye is the best I’ve had. It’s melt-in-your mouth good.
