A honey-inspired menu and cider.

Fairmont Olympic Hotel celebrates the extraction of honey from its rooftop apiary with a special menu and a new honey cider from Seattle Cider Company. Earlier this month, Chef Gavin Stephenson extracted about 600 lbs. of honey from his his fifteen beehives on the rooftop of the Fairmont Olympic Hotel. In celebration, Chef Gavin will be offering a five course Extraction Menu in The Georgian throughout the month of August. Each course incorporates rooftop honey in some way. There will also be the option to pair honey cider and honey beer.

The Fairmont has teamed up with Seattle Cider Company to create a Hard Honey Cider, using rooftop honey to add a subtle sweet to Seattle Cider’s crisp and aromatic cider. The cider launches tomorrow, on August 1st. The cider will be available in both Shuckers and the Terrace Lounge.cider mock up
