At the beginning of November, Chef Brendan McGill of Hitchcock Restaurant Group (“HRG”) opened Italian trattoria and pizzeria Bar Solea in downtown Seattle.
Located in the historic Exchange building at the corner of First Avenue and Marion, Bar Solea offers Neo-Neapolitan pizza, a full menu of antipasti, roast meats, fish, and veggies from the forno, and indulgent desserts. The bar focuses on Italian wines and Italian-inspired cocktails.
“I love a classic Italian trattoria,” says Chef McGill. “Thoughtful and comfortable food, easygoing hospitality, and a vibe that’s perfect for a drink after work or dinner before the symphony. I can’t wait to bring this concept to my favorite Seattle neighborhood.”
We had the pleasure of dining at Bar Solea recently, and got to indulge in some of the delicious menu offerings. We were blown away by the albacore crudo, the Lioni burrata, and the Datteri pizza layered with prosciutto, medjool dates, mozzarella, and aged balsamic. Other favorites included the rabbit en cacciatore, the roast carrots, and the tiramisu. You really can’t go wrong—every dish was bursting with flavor!

Joseph Walter, who has been with HRG for over three years, including stints at Bruciato and Seabird, is the new Chef de Cuisine of Bar Solea. Pete Stalvey, who hails from Bar Taglio, will continue in his role as Bar Manager.
Tony Lombardi, beverage director of HRG, offers a Negroni on tap (it is delightful!) and a selection of spritzes and creative cocktails. Bar Solea’s wine list showcases the portfolio of sibling wine importing company Solea USA, as well as other organic and boutique producers of Italian wine.
When asked about the inspiration behind the name of the restaurant, Chef McGill shared, “Solea, meaning “base” in Latin, refers to the prized Solea tomatoes used in the finest pizzerias in Napoli. Not just the literal base of the pizza, but the foundation of the cuisine.”
“We’re excited to celebrate the genesis of the “pizza wing” of our company with Bar Solea by continuing the tradition of meticulous sourcing and creating authentic food with simple, bold, and delicious flavors,” he adds.
