Many of you already know that Skillet Capitol Hill, a comfort food staple, has a phenomenal brunch. But what you may not know is that they have a brand new dinner menu full of deliciously intriguing options. This new menu, envisioned and executed by the restaurant’s new ownership group and executive chef Nick Taseris, brings unique interpretations of classic comfort food dishes.
One of these new dinner options is the Southern Mess, which is Skillet’s interpretation of chicken and waffles using Nashville hot fried chicken, pimento cheese, and candied pecans on a cornmeal waffle. A few other delectable choices include the Shrimp & Grits, Crab Cakes, Crispy Brussels Sprouts, and the Big Kid Mac, which is made with andouille sausage, peas, and pimento cheese. And don’t forget about dessert—the Waffle Sundae with vanilla ice cream and seasonal compote is out of this world!

After Skillet streamlined its food options and hours due to the pandemic, Chef Taseris was very eager to return dinner to the restaurant when he came aboard in February 2022. He drew on Skillet’s history of providing high-quality, American-inspired food prepared with classic techniques and seasonal ingredients, as well as his own professional experience creating and serving comfort food.
“I’m very excited for our guests to experience these new dishes we’ve been working to develop and perfect over the last few months, and to give them more opportunities to do so with our expanded hours” said Chef Taseris. “We’re sharing our spin on classic comfort food, all while staying true to Skillet’s history and reputation for serving Seattle unique and delicious meals for over 15 years.”
Skillet first opened in 2007, serving meals out of an Airstream trailer. Since then, it has expanded to its current four brick-and-mortar locations, with a fifth scheduled to open in 2023. Skillet plans to expand some of these new menu items at other Skillet locations, such as Skillet Regrade and Skillet Counter in Seattle Center.
