Chefs from Kamonegi and Chan to Collaborate on Japanese-Korean Pop-Up March 5th

Chefs Mutsuko Soma of Kamonegi and Chef Heong Soon Park of Chan Seattle swap cuisines for one night to create a menu celebrating two Asian cuisines that have inspired chefs across the globe. The menu will feature Korean-Japanese dishes, Soma to implement Korean touches on each dish, likewise Park for Japanese, and Soma’s signature soba with a Korean flair.

The Kamonegi x Chan dinner will take place at Chan Seattle at 86 Pine Street on Sunday, March 5 with seating’s available from 5pm to 8:30pm. Tickets for the dinner are available through Brown Paper Tickets (http://www.brownpapertickets.com/event/2888754).

The 6-course meal complete with assorted banchan is $85, including gratuity. Guests can purchase a $30 beverage pairing with the menu and additional bar options at Chan.

Banchan

  • Daikon wrapped citrus herring
  • Squid leek pancake with squid ink kewpie
  • Sunchoke namul
  • Dungeness crab chawanmushi with chogochujang
  • Mackerel croquette with umeboshi aioli
  • Shirataki noodle with pullock roe

Raw

Japanese hamachi crudo with local radishes, chili, citrus and yuzu vinaigrette

Bibim Roasted Root Vegetables

carrot, turnip, parsnip, brussel sprout, buckwheat, sous vide egg, Chan house ssam sauce

Sake Kasu braised Kurobuta pork belly and Wagyu short rib ssam with butter lettuce bouquet, shiso, dipping sauces
